Maria Baez Vales (Mexico City, 1959), pioneer of healthy food in Mexico, an expert in nutrition and health, certified as a Kundalini Yoga teacher by "Universidad del Claustro de Sor Juana" and the Kundalini Research Institute in USA, Certified as an Integrative Health Coach by the IIN (Institute of Integrative Nutrition) in New York, Chef and Health Coach in Raw Vegan Food by the Graff Academy of Atlanta USA and Naturopath by Clayton College. Has a Diploma of Herbolist medicine and nutrition and also a diploma of Traditional Mexican medicine and nutrition both by Centro internacional de capacitación en salud holística y Collége de naturopathie Renovée André Lafon, Rochefort, France.
She has more than twenty years of experience in the field of nutrition and food. She has taken several diplomas and courses related to the field of nutrition and integral medicine: biogenic nutrition, holistic health, herbal medicine, yoga, among many other therapeutic techniques.
María Baez has been chef in restaurants such as "Charlotte Bistro" and "La Sucursal" in Valencia, Spain. She has been the chef and owner of restaurants "La Buena Hierba" and "Hoja Santa". She has also taught as a chef instructor at "Universidad de Turismo y Ciencias Administrativas", also at the Bachelor degree and the Diploma of Gastronomy in "Universidad del Claustro de Sor Juana" and at "Escuela Culinaria Internacional" in Toluca. In this last one she exerted like Dean of the Bachelor Degree of Gastronomy. She has taught numerous comprehensive health courses including nutrition, healthy food, yoga, nutrition training, healthy food, vegetarian, vegan and raw vegan cuisine. She was the winner of the first prize of the Gastronomic Contest organized by the USA Rice Federation (1998). She has participated in television programs presenting "Cocina con María" in "Salud integral" of TV Mexiquense and Teleformula, and was the conductor of the "Cocina Sana" section in the program "Te levanta" of TV Mexiquense.



In 2008 she published the book "Eat well and live more, healthy food to the Mexican style". In January of 2013 presented her book "Mom, Dad: I do not want to be chubby" through a fund of Conaculta. She is the founder of the CESANA Natural Health Center, where she teaches workshops, diplomas, certifications, yoga classes and consultations as a health coach. These consultations promote healthy lifestyles by combining nutrition, herbalism, yoga, among other therapeutic treatments, so that their patients find well-being and comprehensive health. She collaborates in different magazines, has given numerous international conferences and is an adviser at Fundación Mídete, whose function is to work to promote initiatives aimed at eradicating obesity in Mexico. Recently she was invited to collaborate with the Oxfam International Foundation
She is a member of the Conservatory of Mexican Gastronomic Culture, a member of the Strategic Platform against Overweight and Obesity, "CONTRAPESO" and honorary member of the "Asociación de las Cocinas Regionales Argentinas"
